The Holiday Guide 2012: Christmas Baking and Edible Gifts Part I

I'm staying put today, nursing this lingering cold, praying I'll kick it before all of the family arrives...
This self-imposed quarantine has me missing not one but TWO cookie exchanges this weekend!

Which means the holiday baking is up to me.

Luckily, I have my youngest sister in the kitchen with me today and a good friend on Monday.
We'll slowly work our way through a few recipes and more than a few cups of coffee.

What We're Whipping Up!

Old Favorites like:
Peppermint Bark...it's the best. Awesome for gifting, even better for eating!
















Toasted Rice Flour Shortbreads. Also the best.
The recipe I use is from a bakery in Toronto. We gifted these as part of the *welcome package* at our wedding and I whip up a batch every Christmas. The toasted flour is key.














New, sure to be favorites:
Fleur de Sel Caramels
We are trying out the recipe from The Barefoot Contessa's How Easy is That?
We plan to keep a few plain jane and then dip some in dark chocolate! Yum!


















Dairy Free Peanut Butter Cups
I'm making an effort to make some gluten free and dairy free treats so that everyone can enjoy. To make these dairy free I'm using THESE chocolate chips! I've read that the trick to the perfect home made peanut butter cup is to mix some peanut butter into the melted chocolate! We'll see.......

I am most excited about these as it has been years since I've had one. We are going to adapt a recipe from Nigella Lawson's Christmas Cookbook!
