The weekend started out with lots of yummy fall eats: pumpkin pancakes (from my favorite book of the moment: Practical Paleo) and Pumpkin Cheesecake (c/o Wellness Mama).
The recipe for Pumpkin Cheesecake is HUGE. I had a ton of leftover filling so I made some pumpkin chocolate chip puddings for the kids.
These recipes were really great, though I have to admit, I missed the regular cheesecake bottom (a paleo crust is made with nuts, honey and coconut oil). Still good, just not as good.
Still left on my pumpkin recipe to-do list: Homemade Pumpkin Lattes and Pumpkin Soup. Coming Soon.....
On Sunday we headed out to *Know Your Farm*, a local event where farms all over the area opened their doors to visitors. Though there were many farms we would have loved to visit, we had even more chores that needed to get done at home, so we picked just one.
The Limestone Organic Creamery in Elginburg, where we toured the immaculate farm, tested their Peanut butter and honey ice cream, and headed home with 2 glass bottles of milk clinking all the way.
The Creamery offers door to door milk delivery, old-school. We're pretty excited!
Pippa was not happy to be leaving.....
The rest of the weekend was spent at home, picking away at our on-going renos and relaxing....it was pretty perfect.
