Oh, and One More Recipe that I Forgot!
How could I have forgotten THIS recipe? I made a loaf yesterday and my kids (and husband) ate the better part of it, warm from the oven and slathered with organic salted butter.
**It's especially great because most recipes that don't contain flour/gluten/grain products, tend to contain nuts.....which means kids can't take them to school. Bumma. This recipe is school approved!
Pumpkin Spice Loaf
From The Food Lovers Primal Palate
Ingredients:
1/2 cup coconut flour, sifted
6 omega 3 eggs
1/4 cup coconut oil
1/2 cup yacon syrup, or maple syrup
1/2 cup pure pumpkin puree
1/2 tsp sea salt or kosher salt
1/4 tsp baking soda
1 tablespoon vanilla extract
1 tablespoon pumpkin spice blend
Directions:
Preheat oven to 350.
In a large mixing bowl, combine dry ingredients.
In a medium mixing bowl, combine wet ingredients and blend with a hand mixer.
Pour wet ingredients into dry and blend with a hand mixer until evenly combined.
Lightly grease mini cake or loaf pans with coconut oil.
Pour batter into a loaf pan.
Bake for 40 min+ until a toothpick comes out clean.
Let cool completely if you want to be able to get it out of the pan in one piece!

ReplyDeleteThat sounds super yummy Jillian! Question: Where do I find coconut flour and coconut oil for baking? Are these things I can find in a grocery store like Loblaws?
