Kale Chips For Dinner




It's been busy around these parts. We've been prepping for a BIG 3rd birthday party, happening this weekend at our place (more on that later!).

At the same time, our (soon to be) 3 year old has been experiencing some "growing pains". I've been told that this is the way things go..... whether you're turning 3 or 93, birthdays make you crazy.



Either way, there is much to do and no time for dinner...so Kale chips it is. At least it's better than caramel apples....which is what I ate last night.

Kale Chips

Preheat oven to about 375*
Wash and dry 1 bunch of kale
Tear the leaves of of the thick stems of kale
Toss in a bowl with 1-2 Tbsp of olive oil
Spread out on cookie sheets.
Drizzle with about 2 tsp of olive oil
Sprinkle with Parmesan, Asiago or your seasonings of choice ** Optional
Bake for about 15 minutes, until edges are brown and kale is crispy when moved in pan
Sprinkle with kosher salt.

I think these taste like popcorn.........am I delusional?

  1. I'm going to try this because I want to eat Kale but I have no idea how to!

  2. i'm a big fan of kale chips. but we eat them faster than i can make them. i don't think i've ever seen a bowl of them that full.....they disappear pretty quickly.
