Summer Salads: Rustic Potato Salad
We have been on holiday for a week and a half. Living it up at the beach on the east coast. We've been barbecuing almost daily and, in true summer fashion, there is often a potato salad on the table.
I think most potato salads are pretty boring. This rustic potato salad, with herbs and onion and a great dressing...is a refreshing change.

Jill's Rustic Potato Salad
Ingredients
2 lbs. New potatoes
Kosher salt and black pepper
1 cup good mayonnaise (I like Hellman's made with Olive Oil)
A squeeze or two of lemon juice
2 Tbsp of white wine vinegar
3 Tbsp chopped green onions, white and green parts
2-3 dill pickles, finely chopped (key ingredient!!)
1/4 of a large red onion, very finely chopped
3-4 small handfuls of minced fresh tarragon and/or dill
Directions
1. Cover potatoes with water, add 1 Tbsp of salt. Bring to a boil and then simmer for 15 minutes or until just soft. Drain and rinse with cold water. When cool enough to handle, halve or quarter the potatoes, depending on their size. Place in a mixing bowl.
2. Make the dressing: Combine the mayo, lemon juice, vinegar, and a bit of salt and pepper. While the potatoes are still warm, pour the dressing over the potatoes and toss well. Add the green and red onion, pickles and herbs. Toss gently. Allow the salad to sit for at lest 30 minutes for the flavors to develop. Sprinkle with salt and serve at room temperature.
