Grain-Free Baby!



We're back in the kitchen and cooking up a storm!!
There's nothing like time spent cooking and baking to make a house feel like a home.....

Here are a few grain-free (also sugar free!) treats we cooked up this week:

Grain-Free Almond Butter Cookies

I adapted this recipe I found on the web. I added unsweetened organic coconut, dried cranberries, some organic dark chocolate bits and, finally, pecan pieces (is that weird, adding pecans to an almond butter recipe? Like feeding ham to a chicken?).
Anyway, I also doubled the recipe and it turned out beautifully!

1 cup of almond butter
2 eggs
1/3 cup of honey
1/2 tsp baking soda
1 Tbsp lemon juice

I mixed everything with my electric mixer, adding the lemon juice last. I then dropped, the kind of gooey, batter by the tablespoon-full onto a cookie sheet and baked at 350 degrees Fahrenheit for 10 minutes-ish. Until they look "just" cooked.

Grain Free Blueberry Muffins

This recipe is from the Live Well Centre's "Live Well Challenge". Our entire clinic is on the grain-free Primal Blueprint diet and reaping the immense health benefits....but that's another blog:)
Note: I also doubled this!

½ cup coconut flour
½ tsp baking soda
1/3 cup unsweetened shredded coconut
few shakes of salt
4 eggs
1/3 cup coconut milk (not light)
1 tbsp vanilla extract
2 medium bananas, mashed
1 cup (or more) blueberries
flaked coconut for sprinkling, if desired

Mix coconut flour, baking soda, shredded coconut and salt in a large bowl, set aside.
Beat eggs in a separate bowl and add mix in the coconut milk, vanilla extract, and mashed bananas.
Add the wet ingredients to the dry ingredients, mix until well combines.
Fold in blueberries. Divide into 12 muffins. Bake at 350 degrees for 25-30 minutes.
