We've always liked soybeans (aka Edamame) but it wasn't until we were in England, visiting our friends, V & E, that I remembered how much Winnie LOVES them. V made them for dinner one night for the girls and Winnie devoured hers. In fact, no matter how many times I steam these babies up....Winnie gobbles them up!
We ordered these with our sushi dinner Tuesday night:

The best part is that soy beans are a complete protein, rich in vitamins and minerals including folate, potassium and fiber. They are low in saturated fat and considered a heart healthy food!
Recent research suggests that soy may also lower risk of prostate, colon and breast cancers as well as osteoporosis and other bone health problems, and alleviate hot flashes associated with menopause.
We're addicted!
So ... let me get this straight ... a diet consisting solely of soy beans and Joe Louis bars will make me live to 100?
