Homemade Coconut Butter
I was trying to make THIS Blueberry Coconut smoothie recipe. It called for coconut butter. Not coconut OIL, but coconut butter.
I had heard of it, especially for baking, but I had never tried it. I did a little research and found out that I could, very quickly, whip up a batch of my own.
Coconut Butter
Take 1 package of organic unsweetened shredded coconut.
Put it in a food processor and blend, blend, blend!
It takes about 10 minutes to turn the coconut into butter.

The consistency was runny at first, and then it slowly solidifies. The smoothie was really delicious and I have loved the coconut butter on paleo toast with jam (I got that idea from over at Oh She Glows!)
The only issue, after putting it in the fridge I found that it was rock hard. Apparently, you should keep it OUT of the fridge. It's fine at room temperature (though I'd keep my eye on it after a couple of weeks).
SO good.
