Cake!



Saturday May 12, 2012, The Mulberry School will be hosting May Fair!


"We will be featuring delicious food, a plant sale, children’s crafts, music, a fun Maypole dance, an Artisan market featuring local artists, a wicked baking contest & an exciting raffle giving away Wellness Package from the Livewell Centre along with 2 handmade Peruvian dolls".


I am super excited to be at May Fair, hawking my newest project. 
It's a cute little cookbook called: Cake.

Unique to Mulberry Waldorf School, the birthday celebration is one of the most treasured & memorable events for Mulberry families. In this adorable little cookbook you will find 25 favorite birthday cake recipes scattered amongst photos, birthday rhymes, poems & the heartfelt stories/memories of Mulberry parents and their children.


The cookbook is selling for $15 with all proceeds going to The Mulberry School. Be sure to be there to pick up your copy (or two?! these would make GREAT gifts!).


Here is the recipe I submitted to the cookbook:

Grain Free Coconut Cake with Cream Cheese Coconut Icing


Ingredients
1 cup Coconut Oil, Organic, melted
1 cup Maple Syrup, Grade B
1 cup Shredded Coconut
1 Tbsp Pure Vanilla Extract
1 tsp Baking Soda
1 tsp Sea Salt
10 Eggs, Pastured
3/4 cup Coconut Flour, sifted


Directions
1. Preheat oven to 325°F.
2. In a small bowl, add sifted coconut flour, salt, and baking soda.
3. In a large bowl or kitchen mixer, combine eggs, vanilla, maple syrup, and melted coconut oil.
4. Add dry ingredients to wet and continue blend.
5. Once batter is blended and smooth, stir in shredded coconut.
6. Grease two 9-inch cake pans with coconut oil.
7. Pour batter into pans.
8. Bake for 35 minutes. (I think more like 30 minutes would do it!)
9. Test center of cake with a toothpick.
10. If the toothpick comes out clean, then the cakes are done.
11. Remove cakes from oven and cool.
12. Slice each cake in half to create 4 layers of cake.
13. Frost with coconut frosting in between each layer of cake.


Notes
For easy removal, line the bottom of the cake pans with parchment paper.
I iced it with a mixture of cream cheese, vanilla and maple syrup!

Now, what will I make for the Baking Contest at May Fair???? Hmmmm........
