Soup Season.

This pregnancy is evolving. I am losing my love of lentils and starting to crave......red meat!? Sorry veggies, but I am and I am listening to my body. I was terribly anemic in my first pregnancy and it almost thwarted my hopes of a home birth. Not this time!

The third (or was it the tenth??) rainy day in a row had me screaming for a pot of homemade soup. So, I made a good old-fashioned batch of Hamburger Soup. Never heard of it? Really? Maybe it's a Maritime thing.....It so easy, and filling, and yummy!

Hamburger Soup

1 lb of organic extra lean ground beef
1 medium onion
Organic Broth {I used Beef Broth}
Any combination of:

carrots
celery
potatoes
sweet potatoes
turnip
peas
cabbage
tomatoes
squash
green beans
corn
dark leafy greens
Salt and Pepper, to taste

1. Cook the beef with the onion until it is cooked through.
2. Add in any "long cooking" veggies of your choice {I added carrots, celery, cabbage, and sweet potatoes}.
3. Cover with broth. I also threw in a can of diced tomatoes, with the juice....
4. Bring to a boil and then reduce and simmer until the veggies are almost soft.
5. Finally, add in any quick cooking veggies {I used green beans and Swiss chard} and cook for a few more minutes.

When all the veggies are ready, add salt and pepper to taste and serve it up!

  1. It must be a maritime thing because my Mum would make it all the time for me when I was a kid. Funny thing....I Craved it during my first 20 weeks pregnant with Caelyn!
