Mediterranean Kale with Feta

Day three of the detox is done. It’s been a little more difficult than expected, though I do feel like I’m starting to settle into things….

While I’d love to think that the sun and moon revolve around moi, they don’t. I have my family visiting and a husband & baby who love to eat, so regardless of what I'm eating the cooking must go on.... Thankfully, I have plenty of helpers and lots of support!

Steamed kale (with a bit of Bragg’s!) is a perfect detox super-food...but not always a crowd pleaser. Here’s how I jazzed up the leafy green, in order to satisfy the masses!

Mediterranean Kale with Feta


4-6 C water
1 Tbsp fresh lemon juice
½ tsp balsamic vinegar
1 medium bunch of organic kale, washed and chopped into 1 inch pieces
Crumbled feta
Pitted kalamata olives, halved

Bring water to a boil in a large shallow pan. Meanwhile, stir together lemon juice and balsamic vinegar and set aside.
Submerge kale into boiling water for about 2 minutes.
Remove kale with skimmer, letting water drain and then place drained kale in a bowl.
Toss with dressing, olives and feta.
