
I thought I would start my blog with a bit of comfort food....cleaned up. This recipe, from Clean Eating Magazine, is perfect, fresh from the oven on a cold winter afternoon. Spelt flour has replaced the traditional white and the loaf is sweetened with agave instead of white sugar.
It is as delicious as it is nutritious and I love serving it up to my wee one for breakfast or snack. Enjoy!
Ingredients
1 ripe banana, mashed
3/4 c. ground flaxseed
2 egg whites
1/3 c. agave
1 c. nonfat buttermilk
1 tsp baking soda
1/2 tsp sea salt
3/4 c. whole wheat flour
3/4 c. spelt flour
1 tsp orange rind, grated
1 c. blueberries
1/2 c chopped walnuts
Directions
1. Preheat oven to 375. Spray a loaf pan with cooking spray.
2. In a large bowl, combine banana, flaxseed, egg whites, agave and buttermilk. In a separate bowl, mix baking soda, salt, flours and orange rind.
3. Combine dry ingredients into banana mixture. Gently fold in blueberries and walnuts.
4. Pour mixture into loaf pan and bake for 40 minutes.
